    Yeah, kidney isn't really my thing, either. I'm kind of coming around on liver, though, provided it's deep-fried or sauteed in wine, shallots, garlic, and fresh rosemary.

    I know not of the history behind chicken fried steak but I always assumed that it became popular with families that couldn't afford the top choice meats. I even know of families who make it using simple ground chuck, but I am not a fan of doing so. I will say that chicken fried back strap (from a white tail deer) is one of my favorite meats prepared in this fashion.


    And flank steak is awesome. When I grill it, I usually let it set over night in a marinade of Newmans Italian dressing, fresh cilantro, basil, chopped jalapeños, and garlic. Shit is amazing if given time to absorb some extra flavor.

    I've always used a bottom round steak in making my chicken fried steaks. Basically because it don't break the bank and it's widely versatile and easy to work with. Just make sure to trim the excess fat off it first.
